Inspired by Japanese and Buddhist cuisine and based on the so-called Shōjin-Ryōri tradition, the menu speaks a seasonal, purely plant-based language, for which mostly regional products are used. Soy sauces, miso paste and koji come from Berlin. Wheat flour and white sugar are not found here, but the magical power of tea is released in abundance. The tea sommeliers share their knowledge of varieties with dedication and explain the healing effects of the cold-brewed drink. Of course, the precious leaves are not simply brought into contact with water in any way. Premium water in spring water quality ensures that fine but crucial difference.
