Inspired by Japanese and Buddhist cuisine and based on the so-called Shōjin-Ryōri tradition, OUKAN's menu speaks a seasonal, purely plant-based language, mostly using locally sourced products. The tea sommeliers, share with dedication their varietal knowledge and explain the healing properties of the cold-brewed beverage. Of course, the precious leaves are not just somehow brought into contact with water. Premium water of spring water quality makes that subtle but crucial difference.
